High limit thermostat 320 C single pole are used as a safety feature on ovens for ensuring that if the ovens main thermostat fails then the high limit thermostat will prevent the thermostat from going past the safety set temperature.
They are typically set to about 15% over the thermostats maximum control temperature which will automatically cause the heating circuit to go into the open position. The circuit will not go live again until the reset button is pressed. This thermostat is normally positioned in an out of the way position so it cannot be easily overridden by users.
